This salmon recipe is pretty much fool proof but will impress the socks off anyone you make it for. FYI if you want to cook for someone for a special date this is quick easy and extremely impressive!

Ingredients 

2  salmon fillets
1 bunch asparagus, ends trimmed
Large handful green beans, ends trimmed
2 Tbsp olive oil
2 cloves garlic, crushed and chopped
Pinch Sea salt & pepper
1 lemon thinly sliced
2 tbsp Fresh coriander or dill or parsley roughly chopped
2 sheets of foil big enough to wrap each salmon fillet in.

To serve: 2 lemon wedges

Directions

Preheat oven to 200°C degrees.
Lay out each sheet of foil and lay each salmon fillet in the middle of each sheet.
Divide equal amounts of the asparagus and beans on top of each salmon fillet.
In a small bowl whisk the olive oil, garlic, salt and pepper and drizzle equal parts over each salmon fillet.
Sprinkle the herbs over the top of each fillet.
Wrap each side of the foil over the salmon and vegetables, then fold in the top and bottom of the foil so the food is completely covered.
Place the foil packages on a baking tray, then place in the oven for 25 minutes.
Once removed from the oven unwrap the pouches, leave to cool for 5 minutes so the steam can escape.

Squeeze some lemon over the salmon and then it’s ready to eat.
