Do you ever feel like a sweet treat before bed but want a bit of a change from the usual chocolate? (which by the way will keep you awake!) Well then, this healthy white chocolate is for you!

It’s great to keep in the freezer for whenever your sweet tooth is calling. It’s also super easy and quick to make.

Ingredients

1 cup coconut oil – melted
Zest of 1 1/2 oranges – Leave one tbsp aside
2 tbsp rice malt syrup or honey or maple syrup
1 tbsp natural vanilla syrup
½ cup roasted almonds – roughly chopped

Method

Whisk all ingredients (besides the almonds and 1tbsp of the orange zest) in a bowl until well combined. You can use a hand whisk but I find an electric beater works best for this.
Line a rectangle container or small bread tin with baking paper.
Pour the mixture into the container or tin.
Sprinkle the almonds and remaining orange zest on top, so they cover the mixture evenly.
Cover the container with a lid or if you’re using a bread tin cover it with glad wrap or foil.
Leave to set in the freezer on a flat surface for at least 2 hours.
Once set, break into small bite sized pieces and either eat right away or store in the freezer in a covered container.
This should last in the freezer for up to 3 weeks.
