These Lemon Protein Bars may not look so appetizing but I promise you they taste so good and they will give you a healthy boost of energy when you hit that afternoon slump and keep you full and alert until dinner time. They’re also super easy to make and you can store them in the fridge for up to 2 weeks.

Ingredients

3 tbsp cashew butter
2 tbsp tahini
Juice and zest of one lemon
½ cup sultanas
3/4 cup of almonds
½ cup shredded coconut
1-2 tbsp of honey or rice malt syrup (this is optional I find the sultanas make it sweet enough)

Method

Put all ingredients into a food processor and blend until the mixture is well combined and sticks together easily.
Press the mixture into a tin lined with baking paper and leave in the freezer to set for a few hours.
Once it’s set remove from the freezer and cup up into small rectangles. Then they’re ready to eat or store in the fridge for up to 2 weeks.
