This is a great low carb option when you want your sushi fix. The sauce is divine and also makes a great salad dressing. Feel free to play around with different fillings other than the ones listed below.

Makes approx 5 long sushi rolls

Ingredients

For the cauliflower ‘rice’
1 large cauliflower, cut into florets
1 tbsp olive oil
1 generous tbsp tahini

Sushi ingredients

5 nori sheets
¼ cup sesame seeds
1 avocado, cut into long strips
Small bunch coriander
2 carrots, cut into strips lengthways
2 cucumbers, cut into strips lengthways
Dried herbs of your choice

Tahini sauce
2 tbsp tahini
1 tbsp olive oil
Juice of half a lemon
2 tsp apple cider vinegar
Salt and pepper to taste

Method
Place all cauliflower rice ingredients into your food processor and blend until the cauliflower is ground up and resembles rice. Test a little bit to make sure that the mixture is quite moist and sticks together well, if not add a little more tahini.

Lay out a nori sheet with the shiny side facing down on a bamboo mat if you have one. If you don’t, you can use a tea towel with some glad wrap on top to roll the sushi.

Gently press the cauliflower ‘rice’ onto the nori sheet making sure it is about 1cm thick. Cover most of the sheet but be sure to leave about an inch free on the edge furthest from you.

Put your filling in the centre of the ‘rice’. We used 2 strips of carrot, 1 piece of avocado, 1 strip of cucumber and a few coriander leaves, then sprinkled it with sesame seeds and herbs.

To roll the sushi, use your thumbs and forefingers to pick up the edge of the mat that is closest to you. Use your other fingers to hold the filling in as you gently roll the sushi by pulling the mat towards the edge furthest away from you until you create a sushi roll. Gently squeeze around the roll to make sure it is all in place.

To cut the sushi, grab a sharp knife and gently cut through the middle, then continue to cut into smaller parts if you wish.

Continue this until your ingredients are used up. If you are still a little unsure how to roll the sushi properly here is a good video that goes through it.

To make the dipping sauce, mix all ingredients in a small bowl and whisk with a fork until well combined. Enjoy!
