snickers balls

Yes you red that right, you only need these 4 healthy ingredients to make your own snickers balls. They taste just as good if not better than a store bought snickers bar and they are way better for you!

Ingredients

3/4 cup crunchy peanut butter (organic if possible)
3/4 cup dates
½ cup cashew butter
150g dark chocolate or make your own (see instructions at the end of this recipe)

Method

Put the peanut butter and cashew butter in separate bowls and pop in the freezer for an hour. To make the ‘caramel’, place the dates in a food processor with 1 tbsp of water and blend until the dates form a smooth paste.

Take the peanut butter out of the freezer and roll it into 10 separate balls. Take the cashew butter out and, taking small amounts (just over a teaspoon in size), press it onto the peanut butter balls, then roll into a ball again. The cashew butter does not need to cover the whole ball; it is fine if a lot of the peanut butter is still showing.

Take teaspoon sized amounts of the date mixture and press that onto each ball and roll into a ball again. This can be quite messy so rubbing some coconut oil on your hands beforehand will stop the date mixture from sticking to your hands.

Place the balls in the freezer while you melt the chocolate. Place some water in a saucepan so it’s about 4cm full and bring it to the boil. Place a glass bowl over the saucepan with the chocolate in it. Use a spatula to stir it around until it melts, remove from the heat and leave to cool for about 20 minutes. Stir it occasionally so the chocolate doesn’t go hard again.

Remove the balls from the freezer and dip them in the chocolate so they are completely covered, then place them on a flat plate or tray. Once all the balls are covered pop them in the freezer for at least 2 hours, then they will be ready to eat!
