This banana bread is gluten free, refined sugar free and it’s vegan so just about anyone can eat it. It’s so delicious that even the biggest junk food lovers will love it and won’t be able to tell the difference between this and the not so healthy versions.

Ingredients

3 Very ripe large bananas (4 if they are smaller)
1 cup LSA or almond meal
1 cup rolled oats (gluten free)
1 tsp baking soda
1 tbsp lemon juice
2 tsp cinnamon
3 tsp vanilla bean syrup or powder
2 tbsp almond milk (or milk of choice)
1/4 cup coconut oil melted
10 dates diced
Extra banana for the top (optional)

Method

Pre heat the oven to 180°C.

Mix all ingredients except for the dates in a food processor until well combined and the mixture is nice and smooth.

Put the dates into the mixture, give it a quick pulse so the dates are mixed through.

Pour the mixture into a lined bread tin making sure it is level on top. If you are putting a banana on top slice it into threes and place it on top of the mixture. Pop it in the oven for around 40 minutes or until it’s firm on top and a fork comes out clean.

Remove from the oven and leave to sit for 30 minutes. Remove from the tin and place on a cooling rack for another 20 minutes. Enjoy!
